Ingredients for one 9½-inch (24 cm) square pan

  • 200 g good-quality dark chocolate.
  • 130 g vegetable oil (½ cup + 3 tablespoons).
  • 3 large eggs, at room temperature.
  • 150 g sugar (¾ cup minus 1 tablespoon).
  • 1 teaspoon vanilla extract.
  • 20 g cocoa powder (2 tablespoons).
  • 60 g matzo cake meal, or matzo meal ground fine (½ cup minus 1 tablespoon).

Instructions

  1. Line the pan with parchment paper and heat the oven to 350°F (180°C).
  2. In a large microwave-safe bowl, combine the dark chocolate and oil. Melt in short bursts until completely melted.
  3. In another bowl, whisk the eggs, sugar and vanilla. Add them to the chocolate bowl, whisking constantly, until combined.
  4. Grind the matzo meal fine in a food processor with the steel blade (or use matzo cake meal, which comes ground fine already).
  5. Add the matzo meal and cocoa to the chocolate bowl and whisk into a smooth batter.
  6. Pour the batter into the pan and level it with an offset spatula.
  7. Bake for about 20–22 minutes and let cool completely.
  8. Cut into squares and store in an airtight container at room temperature (on hot days you can keep them in the fridge).
