Ingredients for pecan squares

  • 240 g butter or margarine.
  • 100 g powdered sugar.
  • 1 teaspoon vanilla extract.
  • 360 g all-purpose flour (2½ cups + 1 tablespoon).
  • 5 g baking powder (1 teaspoon).
  • 100 g pecans.

Instructions

  1. Toast the pecans and let them cool. Then chop them into small pieces.
  2. Preheat the oven to 340°F (170°C).
  3. Put the butter or margarine in a microwave-safe bowl. Warm it for about 15 seconds, until it's soft but not melted.
  4. Add the powdered sugar and vanilla to the bowl and beat well until creamy.
  5. Mix the flour and baking powder together, add them to the bowl and knead into a slightly sticky dough. Add the chopped pecans and knead again until they're worked in.
  6. Divide the dough into two equal balls. Place one ball on a floured sheet of parchment paper, sprinkle more flour on top and cover with another sheet of parchment. Roll it out into a thin, even sheet. Straighten the edges, and cut into squares with a pizza cutter or a knife. Gently lift the squares with a small offset spatula and arrange them on a baking sheet lined with parchment paper.
  7. Bake for about 11–12 minutes. They brown quickly, so keep an eye on them so they don't burn.
